The Story
โAvakaya is the queen of South Indian pickles โ raw green mango, red chilli, mustard seeds, and fenugreek, packed in thick mustard oil and salted heavy. The version from Andhra is more aggressive than the Tamil or Karnataka style โ more chilli, more mustard pungency, more oil. Ours is made by a cook from Vijayawada whose family makes a fresh batch at the beginning of mango season every April and ages it for three weeks before selling.โ

How to Use
Eat with steamed rice and ghee. A tiny piece goes with curd rice. Never with roti โ it's too sharp.
