The Story

โ€œAvakaya is the queen of South Indian pickles โ€” raw green mango, red chilli, mustard seeds, and fenugreek, packed in thick mustard oil and salted heavy. The version from Andhra is more aggressive than the Tamil or Karnataka style โ€” more chilli, more mustard pungency, more oil. Ours is made by a cook from Vijayawada whose family makes a fresh batch at the beginning of mango season every April and ages it for three weeks before selling.โ€
