The Story
โThis is not a garnish. It's a meal. Dried prawns from the Kerala coast are cooked down with coconut oil, dried red chilli, vinegar, ginger, and garlic until intensely flavoured and shelf-stable. A tablespoon on top of steamed rice with coconut oil is everything. Traditionally made in Christian households along the coast, usually around Christmas or Easter. Our maker is from Alleppey and has been making this for 20 years.โ

Eat with steamed white rice, appam, or tapioca (kappa). Use as a condiment โ a little is a lot.
