The Story
โKaruppatti โ palm jaggery โ is made by reducing the sap from toddy palms over a wood fire. Unlike sugarcane jaggery, it has a complex, slightly smoky, caramel-like depth that makes it irreplaceable in certain South Indian recipes. It's the only sweetener for authentic Chettinad payasam, Konkan-style coconut candy, and many Kerala sweets. Ours is sourced from a supplier in Tirunelveli, one of the last places with an active palm jaggery tradition.โ

How to Use
Use instead of sugar in any South Indian sweet. Dissolve in warm water for a simple health drink. Mix into tamarind rice.
