The Story

โ€œKaruppatti โ€” palm jaggery โ€” is made by reducing the sap from toddy palms over a wood fire. Unlike sugarcane jaggery, it has a complex, slightly smoky, caramel-like depth that makes it irreplaceable in certain South Indian recipes. It's the only sweetener for authentic Chettinad payasam, Konkan-style coconut candy, and many Kerala sweets. Ours is sourced from a supplier in Tirunelveli, one of the last places with an active palm jaggery tradition.โ€
