The Story

โ€œBesan ladoo is deceptively simple โ€” roast chickpea flour in ghee until fragrant and nutty, add sugar and cardamom, roll into balls. But the roasting is everything. It takes 45 minutes of continuous stirring over low heat for the besan to develop the right depth. This comes from a Marwari cook settled in Bangalore whose family has been making this recipe in Jodhpur for four generations. Her batches sell out every Diwali and Ganesh Chaturthi.โ€
