The Story
โPootharekulu (meaning 'layered shells') is one of the most technically demanding Indian sweets โ a sheet of rice starch batter is spread paper-thin over an inverted clay pot and immediately dried, then layered with ghee, sugar, cardamom, and sometimes powdered dry fruits, before being rolled into a cylinder. The skill required to get the sheets paper-thin without tearing is why very few people make this outside the Atreyapuram region of Andhra. Ours is made by a cook originally from Atreyapuram, now in Bangalore.โ
