The Story

โ€œByadgi is a small town in north Karnataka where a unique variety of chilli is grown โ€” dark red, wrinkled, and almost sweet in its heat profile. Unlike Guntur or Kashmiri chilli, Byadgi gives an intense colour with moderate heat. It's the backbone of Karnataka curries, Coorgi pandi, and the red masala in Mangalorean fish curries. Ours is sourced directly from a small grower in Haveri district.โ€

How to Use

Use as the primary chilli in any Karnataka-style curry. 2 tsp gives beautiful colour; 4 tsp gives medium heat.
