The Story

“Kozhikode halwa is made from wheat starch, coconut oil, and sugar — cooked low and slow for 4-6 hours in massive copper uralis by halwa makers who have been doing this for generations. The original is a dark, glossy, intensely sweet confection that stretches and pulls like taffy. Ours are made by a Kozhikode-origin cook in Bangalore who has the full recipe from her family's halwa shop and cuts them into bite-size pieces for easy snacking.”
