โRibbon pakoda is the snack that defines South Indian Diwali โ thin, wide ribbons of rice flour and roasted gram, pressed through a star-shaped mould and fried crisp. The key is the proportion of butter in the dough, which gives it a melt-in-the-mouth quality unlike the stiff commercial versions. This one is made in Coimbatore, where the snack tradition is particularly strong, and uses Bangalore-sourced butter.โ
