Tapioca (Kappa) Chips

The Story

“Tapioca (kappa) is Kerala's other staple alongside rice, and the chips made from it are completely unlike the commercial tapioca chips you find everywhere — thicker, chewier in the centre, with a starchy depth that banana chips don't have. These are cut thick by hand, seasoned with black salt and a small amount of chilli, and fried in coconut oil by a cook from Kottayam, where the best kappa grows.”
